Ingredients
- Gluten-free udon noodles - 200 grams
- Mackerel fillets - 200 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Radishes - 4, thinly sliced
- Red bell pepper - 1, thinly sliced
- Green onions - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Rice vinegar - 1 tablespoon
- Coconut aminos - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, toasted
Steps
- Cook the gluten-free udon noodles according to package instructions, drain, and rinse under cold water. Set aside.
- Season the mackerel fillets with salt and pepper. Heat 1 tablespoon of olive oil in a grill pan over medium heat and grill the mackerel for 4-5 minutes on each side or until cooked through and flaky.
- In a large bowl, combine the cucumber, carrot, radishes, red bell pepper, green onions, and cilantro.
- In a small bowl, whisk together the remaining olive oil, rice vinegar, coconut aminos, sesame oil, salt, and black pepper to make the dressing.
- Add the cooked udon noodles and grilled mackerel (flaked) to the vegetable mixture. Pour the dressing over the salad and toss gently to combine.
- Sprinkle with toasted sesame seeds before serving.
