Ingredients

  • Zucchini - 2 medium, spiralized
  • Mackerel fillets - 2 (about 150g each)
  • Olive oil - 1 tablespoon
  • Miso paste - 2 tablespoons
  • Bone broth - 500 ml
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, sliced
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Place the mackerel fillets on a baking sheet, skin-side down, and brush with olive oil. Season with salt and pepper.
  3. Bake the mackerel in the oven for 15-20 minutes, or until cooked through and flaky.
  4. Meanwhile, in a saucepan, heat bone broth over medium heat. Add minced garlic, grated ginger, and miso paste, stirring until the miso is dissolved.
  5. In a separate skillet, heat sesame oil over medium heat. Add spiralized zucchini and sauté for 3-4 minutes until just tender.
  6. Divide the zucchini noodles between two bowls and ladle the miso broth over the noodles.
  7. Once the mackerel is done, place one fillet on top of each bowl. Garnish with sliced green onions.
  8. Serve immediately and enjoy your delicious Saba Udon!
