Ingredients
- Zucchini - 2 medium, spiralized
- Mackerel fillets - 2 (about 150g each)
- Olive oil - 1 tablespoon
- Miso paste - 2 tablespoons
- Bone broth - 500 ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, sliced
- Sesame oil - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Place the mackerel fillets on a baking sheet, skin-side down, and brush with olive oil. Season with salt and pepper.
- Bake the mackerel in the oven for 15-20 minutes, or until cooked through and flaky.
- Meanwhile, in a saucepan, heat bone broth over medium heat. Add minced garlic, grated ginger, and miso paste, stirring until the miso is dissolved.
- In a separate skillet, heat sesame oil over medium heat. Add spiralized zucchini and sauté for 3-4 minutes until just tender.
- Divide the zucchini noodles between two bowls and ladle the miso broth over the noodles.
- Once the mackerel is done, place one fillet on top of each bowl. Garnish with sliced green onions.
- Serve immediately and enjoy your delicious Saba Udon!
