Ingredients

  • Almond flour - 150g
  • Egg - 1 large
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Grilled mackerel fillets - 200g
  • Soy sauce (or coconut aminos for Paleo) - 1 tablespoon
  • Sliced green onions - 2 tablespoons
  • Sesame seeds - 1 tablespoon
  • Nori sheets - 2 small, cut into strips

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, salt, and baking powder.
  3. In another bowl, whisk the egg and olive oil together until well blended.
  4. Pour the egg mixture into the almond flour mixture and stir until a dough forms.
  5. Line a baking sheet with parchment paper and spread the dough into a round pizza shape, about 1cm thick.
  6. Bake the crust in the preheated oven for 10 minutes or until slightly golden.
  7. Meanwhile, flake the grilled mackerel into bite-sized pieces and mix it with soy sauce.
  8. After the crust is baked, remove it from the oven and evenly distribute the mackerel mixture on top.
  9. Sprinkle sliced green onions and sesame seeds over the mackerel.
  10. Return the pizza to the oven and bake for an additional 10 minutes.
  11. Remove from the oven and garnish with nori strips before slicing and serving.
