Steps
- Start by freezing the saba (mackerel) for at least 24 hours to ensure it's safe for raw consumption.
- Thaw the saba in the refrigerator before preparing.
- Rinse the mackerel under cold water and pat dry with paper towels.
- Using a sharp knife, slice the mackerel into thin sashimi pieces, about 0.5 cm thick.
- Sprinkle a pinch of salt on both sides of the sliced mackerel and let it rest for 5 minutes.
- While the mackerel is resting, peel and julienne the daikon radish into thin strips.
- Arrange the mackerel slices on a plate, along with the julienned daikon and fresh shiso leaves.
- Drizzle ponzu sauce over the sashimi and garnish with sesame seeds and a small dollop of wasabi.
