Ingredients

  • Saba (Mackerel) - 200 grams
  • Salt - 1 teaspoon
  • Ponzu sauce - 4 tablespoons
  • Fresh shiso leaves - 6 leaves
  • Daikon radish - 100 grams
  • Wasabi - 1 teaspoon
  • Sesame seeds - 1 tablespoon

Steps

  1. Start by freezing the saba (mackerel) for at least 24 hours to ensure it's safe for raw consumption.
  2. Thaw the saba in the refrigerator before preparing.
  3. Rinse the mackerel under cold water and pat dry with paper towels.
  4. Using a sharp knife, slice the mackerel into thin sashimi pieces, about 0.5 cm thick.
  5. Sprinkle a pinch of salt on both sides of the sliced mackerel and let it rest for 5 minutes.
  6. While the mackerel is resting, peel and julienne the daikon radish into thin strips.
  7. Arrange the mackerel slices on a plate, along with the julienned daikon and fresh shiso leaves.
  8. Drizzle ponzu sauce over the sashimi and garnish with sesame seeds and a small dollop of wasabi.
