Ingredients

  • Cauliflower - 300 grams, riced
  • Shredded mozzarella cheese - 100 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Grilled mackerel (saba) - 100 grams, flaked
  • Soy sauce - 1 tablespoon
  • Green onions - 2 tablespoons, chopped
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a microwave-safe bowl, steam the riced cauliflower for 5 minutes until tender and allow to cool slightly.
  3. Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
  4. In a large bowl, combine the riced cauliflower, mozzarella cheese, egg, almond flour, salt, and black pepper to form a dough.
  5. Spread the cauliflower dough onto a parchment-lined baking sheet, shaping it into a round pizza crust about 1/2 inch thick.
  6. Bake the crust in the preheated oven for 20 minutes, or until golden and firm.
  7. While the crust is baking, flake the grilled mackerel and mix it with soy sauce and chopped green onions.
  8. Remove the crust from the oven and top it with the mackerel mixture, spreading it evenly.
  9. Return the pizza to the oven and bake for an additional 10 minutes.
  10. Once done, remove from the oven and garnish with nori strips and sesame seeds before slicing and serving.
