Ingredients
- Saba (mackerel) - 200 grams, filleted
- Cucumber - 1 medium, thinly sliced
- Carrot - 1 small, julienned
- Rice vinegar - 3 tablespoons
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Sugar - 1 teaspoon
- Salt - 1/2 teaspoon
- Sesame seeds - 1 tablespoon, toasted
- Nori (seaweed) - 1 sheet, cut into strips (optional)
Steps
- Start by preparing the mackerel. Place the filleted mackerel in a pot of boiling water for about 2-3 minutes until just cooked. Remove and let cool.
- Once cooled, gently flake the mackerel into bite-sized pieces and set aside.
- In a bowl, combine the rice vinegar, soy sauce, mirin, sugar, and salt. Stir well until the sugar is dissolved to create the dressing.
- Add the sliced cucumber and julienned carrot to the dressing, tossing to coat them evenly. Let the vegetables marinate for about 10 minutes.
- After the vegetables have marinated, add the flaked mackerel to the bowl and gently mix everything together.
- Serve the Saba no Sunomono in small bowls, garnished with toasted sesame seeds and strips of nori if using.
