Ingredients

  • Saba (mackerel) - 200 grams, filleted
  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 small, julienned
  • Rice vinegar - 3 tablespoons
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Nori (seaweed) - 1 sheet, cut into strips (optional)

Steps

  1. Start by preparing the mackerel. Place the filleted mackerel in a pot of boiling water for about 2-3 minutes until just cooked. Remove and let cool.
  2. Once cooled, gently flake the mackerel into bite-sized pieces and set aside.
  3. In a bowl, combine the rice vinegar, soy sauce, mirin, sugar, and salt. Stir well until the sugar is dissolved to create the dressing.
  4. Add the sliced cucumber and julienned carrot to the dressing, tossing to coat them evenly. Let the vegetables marinate for about 10 minutes.
  5. After the vegetables have marinated, add the flaked mackerel to the bowl and gently mix everything together.
  6. Serve the Saba no Sunomono in small bowls, garnished with toasted sesame seeds and strips of nori if using.
