Ingredients

  • Mackerel fillets - 200 grams

  • Cucumber - 1 medium, thinly sliced
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1/2, thinly sliced
  • Green onion - 2 stalks, chopped
  • White miso paste - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Honey - 1 teaspoon (optional for sweetness)
  • Sesame seeds - 1 tablespoon, toasted

Steps

  1. Preheat the grill or a grill pan over medium heat.
  2. Season the mackerel fillets with salt on both sides.
  3. Brush the grill or pan with olive oil and place the mackerel skin-side down.
  4. Grill the mackerel for about 5-7 minutes on each side, or until cooked through and flaky.
  5. While the mackerel is cooking, prepare the salad dressing by whisking together the white miso paste, rice vinegar, sesame oil, and honey in a small bowl until smooth.
  6. In a large bowl, combine the mixed salad greens, cucumber, carrot, red bell pepper, and green onion.
  7. Once the mackerel is done, remove it from the grill and let it rest for a few minutes before flaking it into bite-sized pieces.
  8. Add the flaked mackerel to the salad bowl and drizzle the miso dressing over the top.
