Ingredients

  • Udon noodles - 200g (fresh or gluten-free)
  • Saba (mackerel) fillet - 150g
  • Miso paste - 2 tablespoons
  • Goya (bitter melon) - 100g, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Coconut aminos - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Chicken broth (or vegetable broth) - 500ml
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Start by boiling a pot of water and cook the udon noodles according to package instructions until tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the sliced goya to the skillet and cook for 3-4 minutes until it starts to soften.
  4. Push the goya to one side of the skillet and add the saba fillet, cooking for about 3 minutes on each side or until cooked through. Remove the fish and flake it into bite-sized pieces.
  5. In a bowl, mix the miso paste with the coconut aminos and a few tablespoons of the hot chicken broth until smooth, then stir it back into the skillet with the remaining broth.
  6. Add the cooked udon noodles and flaked saba to the skillet, tossing everything together to coat the noodles with the broth and miso mixture. Cook for another 2-3 minutes until heated through.
  7. Serve hot, garnished with chopped green onions and sesame seeds.
