- Goya (bitter melon) - 1 medium, sliced
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Fresh ginger - 1 tablespoon, grated
- Green onions - 2, chopped
- Salt - to taste
- Pepper - to taste
Steps
- In a bowl, combine the white miso paste, mirin (or coconut aminos), minced garlic, and grated ginger to create a marinade.
- Add the mackerel fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
- While the mackerel marinates, prepare the goya by slicing it thinly and sprinkling with a pinch of salt. Let it sit for 10 minutes, then rinse and drain to reduce bitterness.
- Heat sesame oil in a skillet over medium heat. Add the sliced goya and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.
- In the same skillet, push the goya to one side and add the marinated mackerel fillets. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice glaze.
- Serve the mackerel alongside the sautéed goya, garnished with chopped green onions.
