  • Mackerel fillets - 250 grams

  • Goya (bitter melon) - 1 medium, sliced
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 tablespoon, grated
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. In a bowl, combine the white miso paste, mirin (or coconut aminos), minced garlic, and grated ginger to create a marinade.
  2. Add the mackerel fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the mackerel marinates, prepare the goya by slicing it thinly and sprinkling with a pinch of salt. Let it sit for 10 minutes, then rinse and drain to reduce bitterness.
  4. Heat sesame oil in a skillet over medium heat. Add the sliced goya and sauté for 5-7 minutes until tender. Season with salt and pepper to taste.
  5. In the same skillet, push the goya to one side and add the marinated mackerel fillets. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice glaze.
  6. Serve the mackerel alongside the sautéed goya, garnished with chopped green onions.
