Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Season the mackerel fillets with salt and pepper, then grill for about 4-5 minutes on each side until cooked through and crispy.
  3. While the mackerel is grilling, slice the bitter melon and eggplant into thin strips.
