- Udon noodles - 200 grams
- Mackerel (saba) fillets - 2 pieces (about 150 grams each)
- Miso paste - 3 tablespoons
- Coconut aminos - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Goya (bitter melon) - 1 medium-sized, sliced
- Spring onions - 2 stalks, chopped
- Water - 1 liter
- Sea salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Cilantro - for garnish
Steps
- Bring 1 liter of water to a boil in a large pot. Add the udon noodles and cook according to package instructions, usually around 8-10 minutes, until al dente. Drain and set aside.
- In a bowl, mix the miso paste, coconut aminos, sesame oil, minced garlic, grated ginger, and lemon juice to create a marinade.
- Rub the mackerel fillets with the marinade and let them sit for about 10 minutes.
- In a skillet over medium heat, add a little sesame oil and sauté the sliced goya until tender, about 5 minutes. Season with sea salt and black pepper.
- In the same skillet, add the marinated mackerel and cook for about 3-4 minutes on each side until the fish is cooked through and flakes easily.
- In a large mixing bowl, combine the cooked udon noodles, sautéed goya, and any leftover marinade. Toss to coat the noodles evenly.
- Serve the udon mixture in bowls, topped with the grilled mackerel and garnished with chopped spring onions and cilantro.
