Ingredients
- Mackerel fillets - 2 pieces (200g each)
- White miso paste - 4 tablespoons
- Coconut aminos - 2 tablespoons
- Honey - 1 tablespoon
- Goya (bitter melon) - 1 medium (approximately 150g)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Sesame seeds - 1 tablespoon
- Green onions - 2 stalks, chopped
Steps
- In a bowl, mix the white miso paste, coconut aminos, and honey to create the marinade.
- Coat the mackerel fillets in the marinade and refrigerate for at least 15 minutes.
- While the fish is marinating, slice the goya in half lengthwise, remove the seeds, and thinly slice it.
- Heat 1 tablespoon of olive oil in a skillet over medium heat and add the minced garlic, sautéing until fragrant.
- Add the sliced goya to the skillet and cook for about 5-7 minutes, stirring occasionally, until tender. Season with salt to taste.
- Preheat your grill or grill pan over medium-high heat and brush with the remaining olive oil.
- Grill the marinated mackerel fillets for about 4-5 minutes on each side, or until the skin is crispy and the fish is cooked through.
- Serve the grilled mackerel garnished with sesame seeds and chopped green onions alongside the sautéed goya.
