Ingredients

  • Japanese short-grain rice - 150 grams
  • Mackerel (saba) fillets - 2 pieces (about 200 grams)
  • Soy sauce (Halal) - 2 tablespoons
  • Mirin (Halal) - 1 tablespoon
  • Dashi stock (Halal) - 400 ml
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain and let it sit for about 30 minutes.
  2. In a pot, combine the rinsed rice and Halal dashi stock. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice absorbs the liquid.
  3. While the rice is cooking, season the mackerel fillets with salt and pepper. In a skillet over medium heat, sear the mackerel skin-side down for about 4-5 minutes until crispy, then flip and cook for an additional 3 minutes. Remove from heat.
  4. Once the rice is cooked, gently fluff it with a fork. Stir in the soy sauce and mirin, mixing well to ensure even distribution.
  5. To serve, place a portion of the rice in bowls, top with the seared mackerel fillets, and garnish with chopped green onions and toasted sesame seeds.
