- Japanese short-grain rice - 150 grams
- Mackerel (saba) fillets - 2 pieces (about 200 grams)
- Soy sauce (Halal) - 2 tablespoons
- Mirin (Halal) - 1 tablespoon
- Dashi stock (Halal) - 400 ml
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear. Drain and let it sit for about 30 minutes.
- In a pot, combine the rinsed rice and Halal dashi stock. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the rice absorbs the liquid.
- While the rice is cooking, season the mackerel fillets with salt and pepper. In a skillet over medium heat, sear the mackerel skin-side down for about 4-5 minutes until crispy, then flip and cook for an additional 3 minutes. Remove from heat.
- Once the rice is cooked, gently fluff it with a fork. Stir in the soy sauce and mirin, mixing well to ensure even distribution.
- To serve, place a portion of the rice in bowls, top with the seared mackerel fillets, and garnish with chopped green onions and toasted sesame seeds.
