Ingredients
- Sōmen noodles (or zucchini noodles for Paleo) - 200g
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Red bell pepper - 1 medium, thinly sliced
- Radishes - 4, thinly sliced
- Green onions - 2, chopped
- Fresh cilantro - 1/4 cup, chopped
- Sesame oil - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Coconut aminos - 1 tablespoon
- Honey - 1 teaspoon (optional)
- Salt - to taste
- Black sesame seeds - for garnish
Steps
- Cook the Sōmen noodles according to package instructions, then rinse under cold water and drain well.
- In a large mixing bowl, combine the julienned cucumber, carrot, sliced red bell pepper, radishes, green onions, and chopped cilantro.
- In a small bowl, whisk together the sesame oil, rice vinegar, coconut aminos, and honey (if using) until well combined.
- Add the cooked noodles to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
- Season with salt to taste and sprinkle with black sesame seeds before serving.
