Ingredients

  • Sōmen noodles (or zucchini noodles for Paleo) - 200g
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Red bell pepper - 1 medium, thinly sliced
  • Radishes - 4, thinly sliced
  • Green onions - 2, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Sesame oil - 2 tablespoons
  • Rice vinegar - 2 tablespoons
  • Coconut aminos - 1 tablespoon
  • Honey - 1 teaspoon (optional)
  • Salt - to taste
  • Black sesame seeds - for garnish

Steps

  1. Cook the Sōmen noodles according to package instructions, then rinse under cold water and drain well.
  2. In a large mixing bowl, combine the julienned cucumber, carrot, sliced red bell pepper, radishes, green onions, and chopped cilantro.
  3. In a small bowl, whisk together the sesame oil, rice vinegar, coconut aminos, and honey (if using) until well combined.
  4. Add the cooked noodles to the vegetable mixture and pour the dressing over the top. Toss gently to combine all ingredients evenly.
  5. Season with salt to taste and sprinkle with black sesame seeds before serving.
