Ingredients

  • Sōmen noodles - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Green onion - 2 stalks, finely chopped
  • Nori (seaweed) - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Soy sauce - 4 tablespoons (low sodium preferred)
  • Mirin - 2 tablespoons
  • Dashi stock - 200 ml (or water)
  • Wasabi - to taste (optional)

Steps

  1. Boil a pot of water and cook the Sōmen noodles according to package instructions, usually around 3-4 minutes, until al dente.
  2. Drain the noodles and rinse them under cold water to stop the cooking process and cool them down.
  3. In a small bowl, mix together the soy sauce, mirin, and dashi stock to create the dipping sauce.
  4. Prepare the toppings by julienning the cucumber and carrot, and finely chopping the green onion.
  5. To serve, divide the Sōmen noodles into two bowls, arrange the cucumber, carrot, and green onion on top, and sprinkle with toasted sesame seeds and nori strips.
  6. Serve the dipping sauce in small bowls alongside the noodles, and add wasabi if desired.
