- Sōmen noodles - 200 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned

- Nori (seaweed) - 1 sheet, cut into strips
- Sesame seeds - 1 tablespoon, toasted
- Soy sauce - 4 tablespoons (low sodium preferred)
- Mirin - 2 tablespoons
- Dashi stock - 200 ml (or water)
- Wasabi - to taste (optional)
Steps
- Boil a pot of water and cook the Sōmen noodles according to package instructions, usually around 3-4 minutes, until al dente.
- Drain the noodles and rinse them under cold water to stop the cooking process and cool them down.
- In a small bowl, mix together the soy sauce, mirin, and dashi stock to create the dipping sauce.
- Prepare the toppings by julienning the cucumber and carrot, and finely chopping the green onion.
- To serve, divide the Sōmen noodles into two bowls, arrange the cucumber, carrot, and green onion on top, and sprinkle with toasted sesame seeds and nori strips.
- Serve the dipping sauce in small bowls alongside the noodles, and add wasabi if desired.
