Ingredients

  • Sōmen noodles - 200 grams
  • Chicken breast - 200 grams

  • Mirin - 2 tablespoons
  • Sake - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Scallions - 2, finely chopped
  • Carrot - 1 medium, julienned
  • Cucumber - 1 small, julienned
  • Egg - 2, boiled and sliced
  • Nori (seaweed) - 2 sheets, cut into strips
  • Sesame seeds - 1 tablespoon, toasted
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the Sōmen noodles according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.
  2. In a bowl, mix the soy sauce, mirin, sake, and sesame oil to create the sauce.
  3. Season the chicken breast with salt and pepper. Grill or pan-sear the chicken over medium heat for about 6-8 minutes on each side, or until fully cooked. Let it rest before slicing.
  4. In a serving bowl, arrange a portion of the cooled Sōmen noodles.
  5. Pour the sauce over the noodles, then top with sliced grilled chicken, julienned carrot, cucumber, and boiled egg slices.
  6. Garnish with chopped scallions, nori strips, and toasted sesame seeds. Serve immediately.
