- Carrot - 1 medium, julienned
- Cucumber - 1 small, julienned
- Egg - 2, boiled and sliced
- Nori (seaweed) - 2 sheets, cut into strips
- Sesame seeds - 1 tablespoon, toasted
- Salt - to taste

Steps
- Cook the Sōmen noodles according to package instructions, then drain and rinse under cold water to stop the cooking process. Set aside.
- In a bowl, mix the soy sauce, mirin, sake, and sesame oil to create the sauce.
- Season the chicken breast with salt and pepper. Grill or pan-sear the chicken over medium heat for about 6-8 minutes on each side, or until fully cooked. Let it rest before slicing.
- In a serving bowl, arrange a portion of the cooled Sōmen noodles.
- Pour the sauce over the noodles, then top with sliced grilled chicken, julienned carrot, cucumber, and boiled egg slices.
- Garnish with chopped scallions, nori strips, and toasted sesame seeds. Serve immediately.
