  • Ramen noodles - 150 grams
  • Miso paste - 2 tablespoons (30 grams)
  • Vegetable broth - 500 milliliters
  • Soy sauce - 1 tablespoon (15 milliliters)
  • Sesame oil - 1 teaspoon (5 milliliters)
  • Green onions - 2 stalks, sliced
  • Carrots - 1 medium, julienned
  • Baby spinach - 100 grams
  • Tofu - 150 grams, cubed
  • Nori seaweed - 1 sheet, cut into strips
  • Sesame seeds - 1 tablespoon (optional)

Steps

  1. In a medium pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the miso paste and soy sauce to the broth, stirring until fully dissolved.
  3. In a separate pot, cook the ramen noodles according to package instructions until al dente, then drain and set aside.
  4. In the simmering broth, add the julienned carrots and cubed tofu, cooking for about 5 minutes until the carrots are tender.
  5. Stir in the baby spinach and sliced green onions, allowing them to wilt for about 2 minutes.
  6. To serve, divide the cooked ramen noodles into two bowls and ladle the miso broth with vegetables over the noodles.
  7. Garnish with nori strips and sesame seeds, if desired.
