- Soy sauce - 1 tablespoon (15 milliliters)
- Sesame oil - 1 teaspoon (5 milliliters)
- Green onions - 2 stalks, sliced
- Carrots - 1 medium, julienned
- Baby spinach - 100 grams
- Tofu - 150 grams, cubed
- Nori seaweed - 1 sheet, cut into strips
- Sesame seeds - 1 tablespoon (optional)
Steps
- In a medium pot, bring the vegetable broth to a simmer over medium heat.
- Add the miso paste and soy sauce to the broth, stirring until fully dissolved.
- In a separate pot, cook the ramen noodles according to package instructions until al dente, then drain and set aside.
- In the simmering broth, add the julienned carrots and cubed tofu, cooking for about 5 minutes until the carrots are tender.
- Stir in the baby spinach and sliced green onions, allowing them to wilt for about 2 minutes.
- To serve, divide the cooked ramen noodles into two bowls and ladle the miso broth with vegetables over the noodles.
- Garnish with nori strips and sesame seeds, if desired.
