- Pumpkin - 250 grams
- Panko breadcrumbs - 100 grams
- All-purpose flour - 30 grams
- Egg - 1 large
- Spring onion - 2 stalks, finely chopped
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - for frying
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Sliced tomato - 1 medium
- Japanese mayo - to taste
Steps
- Peel and chop the pumpkin into small cubes, then steam or boil until tender for about 15 minutes.
- Once cooked, mash the pumpkin in a bowl until smooth. Allow to cool slightly.
- Add the chopped spring onion, soy sauce, mirin, salt, and black pepper to the mashed pumpkin. Mix until well combined.
- Shape the mixture into two patties, then coat each patty in flour, dip into the beaten egg, and finally coat with panko breadcrumbs.
- In a frying pan, heat vegetable oil over medium heat. Fry the patties for about 3-4 minutes on each side until golden brown and crispy.
- Toast the burger buns lightly in the same pan, if desired.
- Assemble the burger by placing a lettuce leaf on the bottom half of the bun, followed by the pumpkin croquette, a slice of tomato, and a drizzle of Japanese mayo. Top with the other half of the bun.
