Ingredients

  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Green onions - 2, chopped
  • Vegetable oil - 1 tablespoon
  • Cooked white rice - 200 grams (for serving)

Steps

  1. Slice the pork tenderloin into thin strips, about 5 mm thick.
  2. In a bowl, combine grated ginger, soy sauce, mirin, and sugar to create the marinade.
  3. Add the sliced pork to the marinade, ensuring all pieces are well-coated. Let it marinate for about 10 minutes.
  4. Heat vegetable oil in a frying pan over medium-high heat.
  5. Remove the pork from the marinade, allowing excess marinade to drip off, and add it to the pan.
  6. Cook the pork for about 5-7 minutes, stirring frequently, until it is fully cooked and slightly caramelized.
  7. Add the remaining marinade to the pan and cook for an additional 1-2 minutes, allowing the sauce to thicken slightly.
  8. Serve the pork shogayaki over cooked white rice, garnished with chopped green onions.
