- Spaghetti - 200 grams
- Halal pork sausage - 150 grams, casings removed
- Miso paste - 2 tablespoons
- Soy sauce - 1 tablespoon
- Mirin - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Olive oil - 2 tablespoons
- Red chili flakes - 1/2 teaspoon
- Green onion - 2 stalks, chopped
- Shiitake mushrooms - 100 grams, sliced
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and the Halal pork sausage to the skillet. Cook until the sausage is browned, breaking it into small pieces with a spatula, about 5-7 minutes.
- Stir in the sliced shiitake mushrooms and cook until they are soft, about 3-4 minutes.
- Add the miso paste, soy sauce, mirin, and red chili flakes to the skillet. Mix well and cook for another 2 minutes, allowing the flavors to meld.
- Incorporate the cooked spaghetti into the skillet, adding reserved pasta water a little at a time until the sauce reaches the desired consistency. Toss to coat the pasta evenly.
- Season with salt and black pepper to taste. Remove from heat and garnish with chopped green onions before serving.
