Ingredients

  • Spaghetti - 200 grams
  • Halal pork sausage - 150 grams, casings removed
  • Miso paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Mirin - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Olive oil - 2 tablespoons
  • Red chili flakes - 1/2 teaspoon
  • Green onion - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and the Halal pork sausage to the skillet. Cook until the sausage is browned, breaking it into small pieces with a spatula, about 5-7 minutes.
  4. Stir in the sliced shiitake mushrooms and cook until they are soft, about 3-4 minutes.
  5. Add the miso paste, soy sauce, mirin, and red chili flakes to the skillet. Mix well and cook for another 2 minutes, allowing the flavors to meld.
  6. Incorporate the cooked spaghetti into the skillet, adding reserved pasta water a little at a time until the sauce reaches the desired consistency. Toss to coat the pasta evenly.
  7. Season with salt and black pepper to taste. Remove from heat and garnish with chopped green onions before serving.
