- Shiitake mushrooms - 100 grams, sliced
- Enoki mushrooms - 50 grams, trimmed
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chopped green onions - 2 tablespoons, for garnish
- Sesame seeds - 1 teaspoon, for garnish
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the sliced shiitake mushrooms and cook for another 5 minutes until they begin to soften.
- Stir in the enoki mushrooms and cook for an additional 2 minutes.
- Pour in the soy sauce and mirin, mixing well to combine. Let the sauce simmer for 2 minutes to meld the flavors.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Season with salt and black pepper to taste.
- Remove from heat and plate the pasta. Garnish with chopped green onions and sesame seeds before serving.
