  • Shiitake mushrooms - 100 grams, sliced
  • Enoki mushrooms - 50 grams, trimmed
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped green onions - 2 tablespoons, for garnish
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the sliced shiitake mushrooms and cook for another 5 minutes until they begin to soften.
  4. Stir in the enoki mushrooms and cook for an additional 2 minutes.
  5. Pour in the soy sauce and mirin, mixing well to combine. Let the sauce simmer for 2 minutes to meld the flavors.
  6. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce. Season with salt and black pepper to taste.
  7. Remove from heat and plate the pasta. Garnish with chopped green onions and sesame seeds before serving.
