  • Lemon zest - 1 teaspoon
  • Miso paste (white) - 1 tablespoon
  • Soy sauce (low sodium) - 1 teaspoon
  • Vegetable broth - 120 ml
  • Heavy cream - 60 ml
  • Parmesan cheese - 30 grams, grated
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 120 ml of pasta water, then drain the spaghetti.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the miso paste and soy sauce, mixing well. Add the vegetable broth, lemon juice, and lemon zest, stirring to combine. Let it simmer for 2-3 minutes.
  4. Reduce the heat to low, then add the heavy cream and reserved pasta water, stirring until the sauce is well combined and slightly thickened.
  5. Add the drained spaghetti to the skillet, tossing to coat the pasta with the lemon sauce. Sprinkle in the grated Parmesan cheese and mix until melted and creamy.
  6. Season with salt and black pepper to taste. Remove from heat and garnish with fresh parsley before serving.
