- Japanese short-grain rice - 200 grams
- Water - 250 ml
- White miso paste - 50 grams
- Sesame oil - 1 tablespoon
- Nori sheets - 2, cut into strips
- Salt - 1/2 teaspoon
- Chopped green onions - 2 tablespoons
- Toasted sesame seeds - 1 tablespoon
Steps
- Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
- In a medium saucepan, combine the rinsed rice and 250 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed.
- Remove the rice from heat and let it sit covered for 10 minutes to steam.
- In a small bowl, mix the white miso paste with sesame oil, chopped green onions, and salt until well combined to create the filling.
- Once the rice has cooled slightly, wet your hands with water to prevent sticking. Take a handful of rice (about 100 grams) and flatten it in your palm.
- Place a spoonful of the miso filling in the center of the rice and mold the rice around it, forming a triangular or oval shape.
- Repeat with the remaining rice and filling until all onigiri are shaped.
- Wrap each onigiri with a strip of nori and sprinkle with toasted sesame seeds before serving.
