Ingredients

  • Japanese short-grain rice - 200 grams
  • Water - 250 ml
  • White miso paste - 50 grams
  • Sesame oil - 1 tablespoon
  • Nori sheets - 2, cut into strips
  • Salt - 1/2 teaspoon
  • Chopped green onions - 2 tablespoons
  • Toasted sesame seeds - 1 tablespoon

Steps

  1. Rinse the Japanese short-grain rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, combine the rinsed rice and 250 ml of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the rice is tender and water is absorbed.
  3. Remove the rice from heat and let it sit covered for 10 minutes to steam.
  4. In a small bowl, mix the white miso paste with sesame oil, chopped green onions, and salt until well combined to create the filling.
  5. Once the rice has cooled slightly, wet your hands with water to prevent sticking. Take a handful of rice (about 100 grams) and flatten it in your palm.
  6. Place a spoonful of the miso filling in the center of the rice and mold the rice around it, forming a triangular or oval shape.
  7. Repeat with the remaining rice and filling until all onigiri are shaped.
  8. Wrap each onigiri with a strip of nori and sprinkle with toasted sesame seeds before serving.
