Ingredients

  • Cooked rice - 1 cup
  • Chicken breast, diced - 150 grams
  • Onion, finely chopped - 1 medium
  • Carrot, diced - 1 small
  • Green peas - 1/4 cup
  • Ketchup - 2 tablespoons
  • Soy sauce (gluten-free) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Eggs - 4 large
  • Milk - 2 tablespoons
  • Butter - 2 tablespoons
  • Chopped parsley (for garnish) - optional

Steps

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  2. Add the chopped onion and carrot to the skillet, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the cooked rice, green peas, ketchup, soy sauce, salt, and pepper. Mix well and cook for another 3-4 minutes until heated through. Remove from heat and set aside.
  4. In a bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
  5. In a non-stick frying pan, melt the remaining tablespoon of butter over medium heat. Pour in half of the egg mixture, tilting the pan to spread it evenly.
  6. Cook for about 2-3 minutes until the edges start to set but the center is still slightly runny. Spoon half of the fried rice mixture onto one side of the omelette.
  7. Carefully fold the omelette over the rice and slide it onto a plate. Repeat the process with the remaining egg mixture and fried rice.
  8. Garnish with chopped parsley if desired, and serve immediately.
