Ingredients

  • All-purpose flour - 100g
  • Dashi stock (or vegetable stock) - 150ml
  • Egg - 1 large
  • Cabbage - 100g, finely shredded
  • Green onions - 2, finely chopped
  • Carrot - 50g, grated
  • Bacon (Halal) - 50g, chopped
  • Tempura scraps (tenkasu) - 20g
  • Vegetable oil - 2 tablespoons
  • Okonomiyaki sauce - 2 tablespoons
  • Mayonnaise - 1 tablespoon
  • Seaweed flakes - 1 teaspoon
  • Pickled ginger - for garnish (optional)

Steps

  1. In a large mixing bowl, combine the all-purpose flour and dashi stock to create a smooth batter.
  2. Add the egg, shredded cabbage, chopped green onions, grated carrot, chopped Halal bacon, and tempura scraps to the batter. Mix until everything is well combined.
  3. Heat 1 tablespoon of vegetable oil in a non-stick frying pan over medium heat.
  4. Pour half of the batter into the pan, spreading it out into a round pancake about 1.5cm thick. Cook for about 4-5 minutes until the bottom is golden brown.
  5. Carefully flip the pancake and cook for another 4-5 minutes until cooked through. Remove from the pan and keep warm. Repeat with the remaining batter.
  6. Serve the pancakes drizzled with okonomiyaki sauce and mayonnaise. Sprinkle with seaweed flakes and garnish with pickled ginger if desired.
