Ingredients

  • Cauliflower - 300 grams
  • Eggs - 2 large
  • Coconut flour - 30 grams
  • Green onions - 2 stalks, chopped
  • Shredded cabbage - 100 grams
  • Cooked shrimp - 100 grams, chopped
  • Bacon - 50 grams, cooked and crumbled
  • Coconut aminos - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Begin by making the cauliflower crust: remove the leaves and stem from the cauliflower and cut it into florets.
  3. Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool for a few minutes.
  4. Once cooled, pulse the cauliflower in a food processor until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
  5. In a mixing bowl, combine the cauliflower rice, eggs, coconut flour, chopped green onions, shredded cabbage, cooked shrimp, crumbled bacon, coconut aminos, salt, and black pepper. Mix until well combined.
  6. Heat olive oil in a non-stick skillet over medium heat. Pour half of the mixture into the skillet, spreading it evenly to form a pizza shape.
  7. Cook for about 5-7 minutes, or until the bottom is golden brown, then carefully flip and cook for another 5-7 minutes on the other side.
  8. Repeat the process with the remaining mixture to create the second pizza.
  9. Once cooked, transfer the pizzas to a baking sheet and place in the oven for 5-10 minutes to ensure they are fully set.
  10. Remove from the oven, slice, and serve warm.
