- Cauliflower - 300 grams
- Eggs - 2 large
- Coconut flour - 30 grams
- Green onions - 2 stalks, chopped
- Shredded cabbage - 100 grams
- Cooked shrimp - 100 grams, chopped
- Bacon - 50 grams, cooked and crumbled
- Coconut aminos - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
Steps
- Preheat your oven to 200°C (400°F).
- Begin by making the cauliflower crust: remove the leaves and stem from the cauliflower and cut it into florets.
- Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool for a few minutes.
- Once cooled, pulse the cauliflower in a food processor until it resembles rice, then transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower rice, eggs, coconut flour, chopped green onions, shredded cabbage, cooked shrimp, crumbled bacon, coconut aminos, salt, and black pepper. Mix until well combined.
- Heat olive oil in a non-stick skillet over medium heat. Pour half of the mixture into the skillet, spreading it evenly to form a pizza shape.
- Cook for about 5-7 minutes, or until the bottom is golden brown, then carefully flip and cook for another 5-7 minutes on the other side.
- Repeat the process with the remaining mixture to create the second pizza.
- Once cooked, transfer the pizzas to a baking sheet and place in the oven for 5-10 minutes to ensure they are fully set.
- Remove from the oven, slice, and serve warm.
