- Cabbage - 100 grams, finely shredded
- Carrot - 50 grams, grated
- Green onions - 2, finely chopped
- Whole wheat flour - 50 grams
- Egg - 1, beaten
- Soy sauce - 1 tablespoon
- Baking powder - 1 teaspoon
- Salt - 1/4 teaspoon
- Pepper - 1/4 teaspoon
- Ground turkey or chicken - 200 grams
- Olive oil - 1 tablespoon
- Okonomiyaki sauce - 2 tablespoons
- Kewpie mayonnaise - 1 tablespoon (optional)
- Pickled ginger - for garnish
- Nori (seaweed) - for garnish
- Sesame seeds - for garnish
- Whole grain burger buns - 2
Steps
- In a large bowl, combine the finely shredded cabbage, grated carrot, and chopped green onions.
- Add the whole wheat flour, beaten egg, soy sauce, baking powder, salt, and pepper to the vegetable mixture, and stir until well combined.
- In another bowl, mix the ground turkey or chicken with a pinch of salt and pepper.
- Divide the vegetable mixture into two equal portions and shape each portion into a patty, then place the ground meat on top of each patty, pressing gently to adhere.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and cooked through.
- While the patties are cooking, toast the whole grain burger buns in a separate pan until lightly golden.
- Once the patties are cooked, place each on a toasted bun. Drizzle with okonomiyaki sauce and optional Kewpie mayonnaise.
- Garnish with pickled ginger, shredded nori, and sesame seeds before serving.
