Ingredients

  • Cabbage - 100 grams, finely shredded
  • Carrot - 50 grams, grated
  • Green onions - 2, finely chopped
  • Whole wheat flour - 50 grams
  • Egg - 1, beaten
  • Soy sauce - 1 tablespoon
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Pepper - 1/4 teaspoon
  • Ground turkey or chicken - 200 grams
  • Olive oil - 1 tablespoon
  • Okonomiyaki sauce - 2 tablespoons
  • Kewpie mayonnaise - 1 tablespoon (optional)
  • Pickled ginger - for garnish
  • Nori (seaweed) - for garnish
  • Sesame seeds - for garnish
  • Whole grain burger buns - 2

Steps

  1. In a large bowl, combine the finely shredded cabbage, grated carrot, and chopped green onions.
  2. Add the whole wheat flour, beaten egg, soy sauce, baking powder, salt, and pepper to the vegetable mixture, and stir until well combined.
  3. In another bowl, mix the ground turkey or chicken with a pinch of salt and pepper.
  4. Divide the vegetable mixture into two equal portions and shape each portion into a patty, then place the ground meat on top of each patty, pressing gently to adhere.
  5. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-7 minutes on each side, or until golden brown and cooked through.
  6. While the patties are cooking, toast the whole grain burger buns in a separate pan until lightly golden.
  7. Once the patties are cooked, place each on a toasted bun. Drizzle with okonomiyaki sauce and optional Kewpie mayonnaise.
  8. Garnish with pickled ginger, shredded nori, and sesame seeds before serving.
