- Goya (bitter melon) - 200 grams
- Firm tofu - 150 grams
- Pork belly, sliced - 100 grams
- Garlic, minced - 1 clove
- Soy sauce - 1 tablespoon
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions, chopped - 2 tablespoons
Steps
- Slice the goya in half lengthwise and remove the seeds; then cut it into thin slices.
- Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the sliced pork belly and cook until browned, about 5-7 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Stir in the sliced goya and cook for 5-6 minutes until it begins to soften.
- Add the cubed tofu to the skillet and gently stir to combine, being careful not to break the tofu.
- Pour in the soy sauce and season with salt and black pepper to taste. Cook for another 5 minutes until everything is heated through.
- Remove from heat and garnish with chopped green onions before serving.
