Ingredients

  • Goya (bitter melon) - 200 grams
  • Firm tofu - 150 grams
  • Pork belly, sliced - 100 grams
  • Garlic, minced - 1 clove
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions, chopped - 2 tablespoons

Steps

  1. Slice the goya in half lengthwise and remove the seeds; then cut it into thin slices.
  2. Press the firm tofu to remove excess moisture, then cut it into bite-sized cubes.
  3. In a large skillet or wok, heat the sesame oil over medium heat. Add the sliced pork belly and cook until browned, about 5-7 minutes.
  4. Add the minced garlic and cook for an additional minute until fragrant.
  5. Stir in the sliced goya and cook for 5-6 minutes until it begins to soften.
  6. Add the cubed tofu to the skillet and gently stir to combine, being careful not to break the tofu.
  7. Pour in the soy sauce and season with salt and black pepper to taste. Cook for another 5 minutes until everything is heated through.
  8. Remove from heat and garnish with chopped green onions before serving.
