Steps
- Bring a pot of water to a boil.
- Add the fresh spinach to the boiling water and blanch for 1-2 minutes until vibrant green and tender.
- Remove the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Drain and gently squeeze out excess water.
- In a separate bowl, combine soy sauce, mirin, sesame oil, and rice vinegar to make the marinade.
- Chop the blanched spinach into bite-sized pieces and mix it in the marinade, ensuring it's well coated.
- Let the spinach marinate for at least 5 minutes to absorb the flavors.
- Serve the marinated spinach in a small dish, garnished with toasted sesame seeds and chopped green onion.
