Ingredients

  • Fresh spinach - 200 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 teaspoon
  • Toasted sesame seeds - 1 tablespoon
  • Green onion - 1 stalk, finely chopped

Steps

  1. Bring a pot of water to a boil.
  2. Add the fresh spinach to the boiling water and blanch for 1-2 minutes until vibrant green and tender.
  3. Remove the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Drain and gently squeeze out excess water.
  4. In a separate bowl, combine soy sauce, mirin, sesame oil, and rice vinegar to make the marinade.
  5. Chop the blanched spinach into bite-sized pieces and mix it in the marinade, ensuring it's well coated.
  6. Let the spinach marinate for at least 5 minutes to absorb the flavors.
  7. Serve the marinated spinach in a small dish, garnished with toasted sesame seeds and chopped green onion.
