Ingredients

  • Daikon radish - 200 grams
  • Kombu (dried kelp) - 10 grams
  • Water - 500 ml
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Tofu (firm) - 150 grams
  • Mitsuba (Japanese wild parsley) - for garnish
  • Salt - to taste

Steps

  1. Peel the daikon radish and cut it into 2 cm thick rounds.
  2. In a pot, soak the kombu in 500 ml of water for 30 minutes to prepare the dashi broth.
  3. After soaking, slowly heat the water with kombu until just before boiling, then remove the kombu.
  4. Add the daikon rounds to the pot and simmer for about 20 minutes until they are tender.
  5. Cut the firm tofu into cubes and add to the pot along with soy sauce and mirin.
  6. Simmer for an additional 10 minutes, allowing the flavors to meld together.
  7. Season with salt to taste and serve warm, garnished with fresh mitsuba.
