- Daikon radish - 200 grams
- Kombu (dried kelp) - 10 grams
- Water - 500 ml
- Soy sauce - 2 tablespoons
- Mirin - 1 tablespoon
- Tofu (firm) - 150 grams
- Mitsuba (Japanese wild parsley) - for garnish
- Salt - to taste
Steps
- Peel the daikon radish and cut it into 2 cm thick rounds.
- In a pot, soak the kombu in 500 ml of water for 30 minutes to prepare the dashi broth.
- After soaking, slowly heat the water with kombu until just before boiling, then remove the kombu.
- Add the daikon rounds to the pot and simmer for about 20 minutes until they are tender.
- Cut the firm tofu into cubes and add to the pot along with soy sauce and mirin.
- Simmer for an additional 10 minutes, allowing the flavors to meld together.
- Season with salt to taste and serve warm, garnished with fresh mitsuba.
