Ingredients

  • Daikon radish - 150 grams
  • Carrot - 100 grams
  • Shiitake mushrooms - 50 grams
  • Firm tofu - 200 grams
  • Konjac noodles - 100 grams
  • Kombu (dried seaweed) - 10 grams
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Vegetable broth - 500 ml
  • Green onions - 2 stalks
  • Sesame oil - 1 teaspoon
  • Salt - to taste

Steps

  1. Begin by soaking the kombu in 500 ml of water for 30 minutes to create a flavorful broth.
  2. While the kombu is soaking, peel and cut the daikon radish and carrot into bite-sized pieces.
  3. Slice the shiitake mushrooms and firm tofu into manageable pieces.
  4. After soaking, remove the kombu from the water and bring the vegetable broth to a simmer in a large pot.
  5. Add the daikon, carrot, and shiitake mushrooms to the pot. Allow them to simmer for 15 minutes until they start to soften.
  6. Next, add the firm tofu, konjac noodles, soy sauce, mirin, and a pinch of salt to the pot. Simmer for an additional 10 minutes.
  7. In the last few minutes of cooking, drizzle sesame oil into the pot and stir gently.
  8. Finely chop the green onions and sprinkle them on top just before serving.
  9. Serve hot in bowls, ensuring each bowl has a variety of ingredients.
