Ingredients

  • Dashi stock - 500 ml
  • Daikon radish - 150 g, peeled and sliced
  • Tofu (firm) - 200 g, cubed
  • Carrot - 100 g, sliced
  • Shiitake mushrooms - 50 g, sliced
  • Konnyaku (konjac) - 100 g, sliced
  • Green onions - 2, chopped
  • Soy sauce (halal) - 2 tablespoons
  • Mirin (halal) - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Prepare the dashi stock by bringing 500 ml of water to a simmer and adding dashi powder; stir until dissolved.
  2. Add the sliced daikon and carrot to the simmering dashi and cook for 15 minutes until they start to soften.
  3. Add the sliced konnyaku and shiitake mushrooms to the pot and continue to simmer for another 10 minutes.
  4. Gently add the cubed tofu to the pot and allow it to warm through for about 5 minutes.
  5. Stir in the soy sauce and mirin, adjusting salt and black pepper to taste.
  6. Simmer the stew for an additional 5 minutes, allowing the flavors to meld.
  7. Serve hot, garnished with chopped green onions.
