Ingredients
- Dashi stock - 500 ml
- Daikon radish - 150 g, peeled and sliced
- Tofu (firm) - 200 g, cubed
- Carrot - 100 g, sliced
- Shiitake mushrooms - 50 g, sliced
- Konnyaku (konjac) - 100 g, sliced
- Green onions - 2, chopped
- Soy sauce (halal) - 2 tablespoons
- Mirin (halal) - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Prepare the dashi stock by bringing 500 ml of water to a simmer and adding dashi powder; stir until dissolved.
- Add the sliced daikon and carrot to the simmering dashi and cook for 15 minutes until they start to soften.
- Add the sliced konnyaku and shiitake mushrooms to the pot and continue to simmer for another 10 minutes.
- Gently add the cubed tofu to the pot and allow it to warm through for about 5 minutes.
- Stir in the soy sauce and mirin, adjusting salt and black pepper to taste.
- Simmer the stew for an additional 5 minutes, allowing the flavors to meld.
- Serve hot, garnished with chopped green onions.
