- Daikon radish - 200 grams
- Carrot - 100 grams
- Shiitake mushrooms - 100 grams
- Konjac noodles - 150 grams
- Eggs - 2 large
- Chicken thighs - 300 grams, boneless and skinless
- Bone broth - 500 ml
- Coconut aminos - 2 tablespoons
- Ginger - 10 grams, sliced
- Green onions - 2 stalks, chopped
- Sea salt - to taste
- Black pepper - to taste
Steps
- Peel and slice the daikon radish and carrot into thick rounds.
- In a pot, add the bone broth, coconut aminos, sliced ginger, and a pinch of sea salt. Bring to a gentle simmer.
- Add the chicken thighs to the pot and cook for about 15 minutes until they are cooked through.
- Remove the chicken, let it cool slightly, then shred it into bite-sized pieces.
- Add the daikon and carrots to the broth and simmer for about 20 minutes until tender.
- Meanwhile, boil the eggs in a separate pot for 7 minutes, then transfer them to cold water to cool before peeling.
- Add the shiitake mushrooms and konjac noodles to the broth and cook for another 5 minutes.
- Season the broth with black pepper and adjust salt to taste.
- To serve, place the daikon, carrots, mushrooms, konjac noodles, and shredded chicken in bowls. Halve the boiled eggs and place on top, then ladle the broth over the ingredients.
- Garnish with chopped green onions and enjoy your Oden Platter!
