Ingredients

  • dashi stock - 500 ml
  • daikon radish - 100 g, peeled and sliced into thick rounds
  • carrot - 100 g, peeled and cut into thick rounds
  • konnyaku (konjac) - 100 g, cut into triangles
  • firm tofu - 200 g, cut into cubes
  • shiitake mushrooms - 4 pieces, stems removed
  • green onions - 2, cut into 5 cm lengths
  • soy sauce - 2 tablespoons
  • mirin - 1 tablespoon
  • salt - to taste
  • sesame oil - for drizzling

Steps

  1. In a pot, bring the dashi stock to a gentle simmer over medium heat.
  2. Add the daikon radish and carrot to the pot, and simmer for about 10 minutes until slightly tender.
  3. Introduce the konnyaku and shiitake mushrooms to the pot, and cook for an additional 5 minutes.
  4. Carefully add the tofu cubes, soy sauce, and mirin to the pot, stirring gently to avoid breaking the tofu.
  5. Simmer everything together for another 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Taste the broth and adjust seasoning with salt as needed.
  7. Once ready, serve the oden in bowls, garnished with green onions and a drizzle of sesame oil.
