Steps
- In a pot, bring the dashi stock to a gentle simmer over medium heat.
- Add the daikon radish and carrot to the pot, and simmer for about 10 minutes until slightly tender.
- Introduce the konnyaku and shiitake mushrooms to the pot, and cook for an additional 5 minutes.
- Carefully add the tofu cubes, soy sauce, and mirin to the pot, stirring gently to avoid breaking the tofu.
- Simmer everything together for another 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
- Taste the broth and adjust seasoning with salt as needed.
- Once ready, serve the oden in bowls, garnished with green onions and a drizzle of sesame oil.
