Ingredients

  • Ayu fish - 2 whole (about 150g each)
  • Soy sauce - 50 ml
  • Mirin - 50 ml
  • Sake (halal) - 50 ml
  • Sugar - 2 tablespoons
  • Water - 200 ml
  • Ginger - 1 tablespoon, sliced
  • Green onions - 2 stalks, cut into 4 cm lengths
  • Sesame oil - 1 teaspoon

Steps

  1. Clean the Ayu fish by removing the guts and rinsing them under cold water. Pat dry with paper towels.
  2. In a saucepan, combine soy sauce, mirin, sake, sugar, and water. Stir well until sugar is dissolved.
  3. Add ginger slices and green onions to the sauce mixture, bringing it to a gentle simmer over medium heat.
  4. Carefully add the Ayu fish to the saucepan, ensuring they are submerged in the liquid. Simmer for about 10-15 minutes, occasionally spooning the sauce over the fish.
  5. Once the fish are cooked through and have absorbed the flavors, remove them from the saucepan and place them on a serving plate.
  6. Increase the heat and reduce the sauce until slightly thickened, about 5 minutes. Drizzle the sauce over the fish and finish with a sprinkle of sesame oil.
  7. Serve warm with steamed rice and enjoy your Nitsuke Ayu.
