Ingredients
- Soba noodles - 150 grams
- Kombu (dried kelp) - 10 grams
- Water - 750 milliliters
- Soy sauce - 30 milliliters
- Mirin - 15 milliliters
- Tofu (firm) - 100 grams, cubed
- Daikon radish - 50 grams, grated
- Carrot - 50 grams, julienned
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Nori (seaweed) - 1 sheet, cut into strips
Steps
- In a pot, combine the kombu with water and allow it to soak for at least 30 minutes.
- After soaking, heat the pot over medium heat until just before boiling, then remove the kombu.
- Add the soy sauce and mirin to the dashi and stir well.
- In a separate pot, cook the soba noodles according to package instructions, usually about 4-5 minutes, then drain and rinse under cold water to stop the cooking process.
- In a pan, gently sauté the cubed tofu until golden brown on all sides, about 5-7 minutes.
- To serve, divide the soba noodles into two bowls, ladle the warm dashi over the noodles, and top with sautéed tofu, grated daikon, julienned carrot, and chopped green onions.
- Garnish with sesame seeds and nori strips before serving.
