Ingredients

  • Soba noodles - 150 grams
  • Kombu (dried kelp) - 10 grams
  • Water - 750 milliliters
  • Soy sauce - 30 milliliters
  • Mirin - 15 milliliters
  • Tofu (firm) - 100 grams, cubed
  • Daikon radish - 50 grams, grated
  • Carrot - 50 grams, julienned
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Nori (seaweed) - 1 sheet, cut into strips

Steps

  1. In a pot, combine the kombu with water and allow it to soak for at least 30 minutes.
  2. After soaking, heat the pot over medium heat until just before boiling, then remove the kombu.
  3. Add the soy sauce and mirin to the dashi and stir well.
  4. In a separate pot, cook the soba noodles according to package instructions, usually about 4-5 minutes, then drain and rinse under cold water to stop the cooking process.
  5. In a pan, gently sauté the cubed tofu until golden brown on all sides, about 5-7 minutes.
  6. To serve, divide the soba noodles into two bowls, ladle the warm dashi over the noodles, and top with sautéed tofu, grated daikon, julienned carrot, and chopped green onions.
  7. Garnish with sesame seeds and nori strips before serving.
