- Udon noodles - 200 grams
- Beef (thinly sliced, preferably sirloin or ribeye) - 200 grams
- Onion (sliced) - 1 medium
- Green onion (chopped) - 2 stalks
- Soy sauce - 60 ml
- Mirin - 30 ml
- Dashi stock (or water with dashi powder) - 500 ml
- Sugar - 1 tablespoon
- Sesame oil - 1 tablespoon
- Garlic (minced) - 2 cloves
- Ginger (grated) - 1 teaspoon
- Salt - to taste
- Pepper - to taste
Steps
- Cook the udon noodles according to package instructions, then drain and set aside.
- In a large pot, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
- Add the sliced onion to the pot and cook until translucent.
- Add the thinly sliced beef to the pot, season with salt and pepper, and cook until browned.
- Pour in the dashi stock, soy sauce, mirin, and sugar. Bring to a gentle simmer.
- Add the cooked udon noodles to the pot and simmer for another 5 minutes to heat through and absorb the flavors.
- Serve hot, garnished with chopped green onions.
