Ingredients

  • Udon noodles - 200 grams
  • Beef (thinly sliced, preferably sirloin or ribeye) - 200 grams
  • Onion (sliced) - 1 medium
  • Green onion (chopped) - 2 stalks
  • Soy sauce - 60 ml
  • Mirin - 30 ml
  • Dashi stock (or water with dashi powder) - 500 ml
  • Sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Ginger (grated) - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant.
  3. Add the sliced onion to the pot and cook until translucent.
  4. Add the thinly sliced beef to the pot, season with salt and pepper, and cook until browned.
  5. Pour in the dashi stock, soy sauce, mirin, and sugar. Bring to a gentle simmer.
  6. Add the cooked udon noodles to the pot and simmer for another 5 minutes to heat through and absorb the flavors.
  7. Serve hot, garnished with chopped green onions.
