Ingredients

  • Jasmine rice - 150 grams
  • Halal chicken breast - 100 grams, diced
  • Carrot - 1 medium, diced
  • Green peas - 50 grams, frozen
  • Red bell pepper - 1 small, diced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 30 ml (ensure it's halal)
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Egg - 1, beaten

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced halal chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add the minced garlic, diced carrot, and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.
  4. Push the chicken and vegetables to one side of the skillet, then pour the beaten egg into the empty side. Scramble the egg until fully cooked, then mix everything together.
  5. Add the cooked jasmine rice to the skillet, followed by the green peas, soy sauce, sesame oil, and chopped green onions. Stir well to combine and heat through, about 2-3 minutes.
  6. Season with salt and black pepper to taste, and serve hot.
