- Jasmine rice - 150 grams
- Halal chicken breast - 100 grams, diced
- Carrot - 1 medium, diced
- Green peas - 50 grams, frozen
- Red bell pepper - 1 small, diced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 30 ml (ensure it's halal)
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Egg - 1, beaten
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then cook it according to package instructions and set aside.
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the diced halal chicken and cook until browned and cooked through, about 5-7 minutes.
- Add the minced garlic, diced carrot, and red bell pepper to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.
- Push the chicken and vegetables to one side of the skillet, then pour the beaten egg into the empty side. Scramble the egg until fully cooked, then mix everything together.
- Add the cooked jasmine rice to the skillet, followed by the green peas, soy sauce, sesame oil, and chopped green onions. Stir well to combine and heat through, about 2-3 minutes.
- Season with salt and black pepper to taste, and serve hot.
