Ingredients

  • Chicken thigh fillets - 300 grams
  • Green onions - 4 stalks
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sake - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Skewers - 4 (soaked in water for 30 minutes if wooden)

Steps

  1. Cut the chicken thigh fillets into bite-sized pieces (about 2.5 cm).
  2. Chop the green onions into 5 cm lengths.
  3. In a bowl, mix soy sauce, mirin, sake, sesame oil, salt, and black pepper to create a marinade.
  4. Add the chicken pieces to the marinade and let them soak for at least 15 minutes.
  5. Thread the chicken and green onions alternately onto the skewers.
  6. Preheat the grill or BBQ to medium-high heat.
  7. Grill the skewers for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  8. Serve hot, optionally with extra soy sauce for dipping.
