Ingredients

  • Ground chicken - 250 grams
  • Scallions (negi) - 50 grams, finely chopped
  • Gluten-free panko breadcrumbs - 30 grams
  • Egg - 1 large
  • Soy sauce - 1 tablespoon
  • Garlic - 1 clove, minced
  • Ginger - 1 teaspoon, grated
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lettuce leaves - 4 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Miso paste - 1 tablespoon
  • Mayonnaise - 2 tablespoons
  • Rice vinegar - 1 teaspoon
  • Olive oil - for cooking

Steps

  1. In a mixing bowl, combine the ground chicken, chopped scallions, gluten-free panko breadcrumbs, egg, soy sauce, minced garlic, grated ginger, salt, and black pepper. Mix thoroughly until all ingredients are well combined.
  2. Divide the mixture into two equal portions and form each portion into a patty, about 1.5 cm thick.
  3. Heat a tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until fully cooked and golden brown.
  4. While the patties are cooking, prepare the miso mayonnaise by mixing miso paste, mayonnaise, and rice vinegar in a small bowl until smooth.
  5. To assemble the burgers, place a lettuce leaf on the bottom of each plate, add the cooked patty, and top with sliced tomato and cucumber. Drizzle the miso mayonnaise over the top and finish with another lettuce leaf if desired.
  6. Serve immediately and enjoy your unique Negi Burger.
