- Natto - 100 grams
- Vegetable broth - 500 ml
- Miso paste - 2 tablespoons
- Tofu - 100 grams, cubed
- Green onions - 2 stalks, chopped
- Shiitake mushrooms - 100 grams, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 medium, julienned
- Spinach - 100 grams
- Sesame oil - 1 teaspoon
- Soy sauce - 1 tablespoon
- Black pepper - to taste
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the sliced shiitake mushrooms and julienned carrot to the pot, and cook for another 3-4 minutes until the vegetables are tender.
- Pour in the vegetable broth and bring to a simmer.
- Stir in the miso paste and soy sauce until fully dissolved in the broth.
- Add the cubed tofu and spinach, cooking for an additional 3-5 minutes until the spinach wilts.
- Finally, add the natto and chopped green onions, stirring gently to combine, and cook for another 2 minutes.
- Season with black pepper to taste, then serve hot.
