Ingredients

  • Natto - 100 grams
  • Vegetable broth - 500 ml
  • Miso paste - 2 tablespoons
  • Tofu - 100 grams, cubed
  • Green onions - 2 stalks, chopped
  • Shiitake mushrooms - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams
  • Sesame oil - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  2. Add the sliced shiitake mushrooms and julienned carrot to the pot, and cook for another 3-4 minutes until the vegetables are tender.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Stir in the miso paste and soy sauce until fully dissolved in the broth.
  5. Add the cubed tofu and spinach, cooking for an additional 3-5 minutes until the spinach wilts.
  6. Finally, add the natto and chopped green onions, stirring gently to combine, and cook for another 2 minutes.
  7. Season with black pepper to taste, then serve hot.
