Natto Rice Bowl

Ingredients

  • Short-grain sushi rice - 150 grams
  • Natto - 200 grams
  • Soy sauce - 30 ml
  • Chopped green onions - 2 tablespoons
  • Shredded nori seaweed - 2 sheets
  • Sesame seeds - 1 tablespoon
  • Pickled ginger - 40 grams
  • Spinach - 100 grams
  • Water - 300 ml

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then soak in 300 ml of water for 30 minutes.
  2. Bring the soaked rice and water to a boil in a pot over medium heat. Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes or until all the water is absorbed.
  3. While the rice is cooking, prepare the spinach by blanching it in boiling water for 1-2 minutes, then drain and set aside.
  4. In a bowl, mix the natto with soy sauce and half of the chopped green onions.
  5. Once the rice is cooked, fluff it with a fork and divide it between two bowls.
  6. Top each bowl of rice with the natto mixture, blanched spinach, shredded nori, and remaining green onions.
  7. Sprinkle sesame seeds on top and serve with pickled ginger on the side.
