Ingredients

  • Natto - 100 grams
  • Sushi rice - 150 grams
  • Nori sheets - 2 sheets
  • Cucumber - 1 small, julienned
  • Avocado - 1 small, sliced
  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Scallions - 2, finely chopped
  • Toasted sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to package instructions.
  2. Once the rice is cooked, let it cool slightly and mix in the mirin, sesame oil, and a pinch of salt.
  3. In a bowl, combine the natto with the soy sauce and chopped scallions. Mix well.
  4. Lay a nori sheet on a bamboo sushi mat or a clean surface. Spread half of the sushi rice evenly over the nori, leaving a 2 cm border at the top.
  5. Place half of the natto mixture, julienned cucumber, and avocado slices in a line across the center of the rice.
  6. Carefully roll the sushi away from you, using the mat to help roll tightly. Seal the edge with a little water.
  7. Repeat the process with the second nori sheet and remaining ingredients.
  8. Preheat the oven to 180°C (350°F). Cut the rolls into bite-sized pieces and place them on a baking tray.
  9. Sprinkle with toasted sesame seeds and bake in the oven for 10-12 minutes, until heated through.
  10. Serve warm with extra soy sauce for dipping.
