Ingredients
- Udon noodles (zucchini noodles for Paleo) - 200g
- Eggplant - 1 medium (approx. 200g)
- Bitter melon (goya) - 100g
- Miso paste (white or yellow) - 2 tablespoons
- Vegetable broth (low-sodium) - 500ml
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sesame oil - 1 tablespoon
- Green onions - 2, chopped
- Cilantro - a handful, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the eggplant into bite-sized cubes and place them on a baking tray. Drizzle with sesame oil, sprinkle with salt, and roast in the oven for 15-20 minutes until golden and tender.
- While the eggplant is roasting, prepare the bitter melon by slicing it in half and removing the seeds. Cut into thin half-moons.
- In a pot, heat a splash of sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the sliced bitter melon to the pot and cook for another 3-4 minutes, stirring occasionally.
- Pour in the vegetable broth and bring to a gentle simmer.
- Once the eggplant is done roasting, add it to the pot along with the miso paste. Stir until the miso is dissolved and the soup is well combined.
- Meanwhile, cook the zucchini noodles in boiling water for 2-3 minutes until just tender, then drain.
- To serve, place a portion of zucchini noodles in a bowl, ladle the miso soup with eggplant and bitter melon over the top, and garnish with chopped green onions and cilantro.
