Ingredients

  • Japanese eggplant - 2 medium
  • Soy sauce - 3 tablespoons
  • Mirin - 2 tablespoons
  • Sugar - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Fresh ginger - 1 teaspoon, grated
  • Green onions - 2, finely chopped
  • Water - 100 ml

Steps

  1. Wash the eggplants and cut them into bite-sized pieces, about 2 cm thick.
  2. In a skillet, heat the sesame oil over medium heat and add the eggplant pieces.
  3. Sauté the eggplant for about 5 minutes until they start to soften.
  4. In a bowl, mix together the soy sauce, mirin, sugar, grated ginger, and water.
  5. Pour the sauce mixture over the eggplant in the skillet and stir well.
  6. Bring the mixture to a simmer, then reduce the heat to low and cover the skillet.
  7. Let it simmer for about 15-20 minutes, stirring occasionally, until the eggplant is tender and the sauce has thickened.
  8. Once done, remove from heat and sprinkle with chopped green onions before serving.
