- Green onions - 2, finely chopped
- Water - 100 ml
Steps
- Wash the eggplants and cut them into bite-sized pieces, about 2 cm thick.
- In a skillet, heat the sesame oil over medium heat and add the eggplant pieces.
- Sauté the eggplant for about 5 minutes until they start to soften.
- In a bowl, mix together the soy sauce, mirin, sugar, grated ginger, and water.
- Pour the sauce mixture over the eggplant in the skillet and stir well.
- Bring the mixture to a simmer, then reduce the heat to low and cover the skillet.
- Let it simmer for about 15-20 minutes, stirring occasionally, until the eggplant is tender and the sauce has thickened.
- Once done, remove from heat and sprinkle with chopped green onions before serving.
