- Mirin - 1 tablespoon
- Sesame oil - 1 tablespoon
- Vegetable broth - 200 milliliters
- Green onions - 2, chopped
- Panko breadcrumbs - 50 grams
- Grated Parmesan cheese - 30 grams (or nutritional yeast for vegan option)
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Cook the soba noodles according to package instructions, drain and set aside.
- In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add sliced eggplant and shiitake mushrooms to the skillet, cooking for about 5-7 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- In a bowl, mix together soy sauce, mirin, and vegetable broth. Pour this mixture into the skillet, stirring well to combine.
- Add the cooked soba noodles to the skillet, mixing everything together, and season with salt and black pepper to taste.
- Transfer the noodle and vegetable mixture to a baking dish.
- In a small bowl, combine panko breadcrumbs and grated Parmesan cheese. Sprinkle this topping evenly over the noodle mixture.
- Bake in the preheated oven for 20 minutes, or until the top is golden brown.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped green onions.
