  • Soy sauce - 2 tablespoons
  • Mirin - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 200 milliliters
  • Green onions - 2, chopped
  • Panko breadcrumbs - 50 grams
  • Grated Parmesan cheese - 30 grams (or nutritional yeast for vegan option)
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the soba noodles according to package instructions, drain and set aside.
  3. In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  4. Add sliced eggplant and shiitake mushrooms to the skillet, cooking for about 5-7 minutes until softened.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. In a bowl, mix together soy sauce, mirin, and vegetable broth. Pour this mixture into the skillet, stirring well to combine.
  7. Add the cooked soba noodles to the skillet, mixing everything together, and season with salt and black pepper to taste.
  8. Transfer the noodle and vegetable mixture to a baking dish.
  9. In a small bowl, combine panko breadcrumbs and grated Parmesan cheese. Sprinkle this topping evenly over the noodle mixture.
  10. Bake in the preheated oven for 20 minutes, or until the top is golden brown.
  11. Remove from the oven and let cool for a few minutes before serving. Garnish with chopped green onions.
