Steps

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the sliced eggplant to the skillet, stirring well to coat with the oil and garlic.
  4. Cook the eggplant for about 8-10 minutes, stirring occasionally, until it becomes tender.
  5. In a small bowl, mix the miso paste and coconut aminos until smooth.
  6. Pour the miso mixture over the cooked eggplant and stir well to combine, cooking for an additional 2-3 minutes.
  7. Drizzle the sesame oil over the dish, and season with salt to taste.
  8. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
