- Japanese eggplant - 300 grams
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Red chili flakes - 1/2 teaspoon
- Mushrooms (shiitake or button) - 100 grams, sliced
- Bell pepper (red or yellow) - 1 medium, sliced
- Ground cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Wash and slice the Japanese eggplant into 1 cm thick rounds.
- Heat sesame oil in a large skillet over medium heat.
- Add minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
- Add the sliced eggplant to the skillet and stir-fry for about 5 minutes until they begin to soften.
- Add sliced mushrooms and bell pepper, continuing to stir-fry for another 5 minutes.
- Pour in the soy sauce, sprinkle with red chili flakes, ground cumin, salt, and black pepper. Mix well to combine.
- Cook for an additional 3-4 minutes, stirring occasionally, until vegetables are thoroughly cooked and coated in the sauce.
- Garnish with chopped green onion before serving.
