  • Sesame oil - 1 tablespoon
  • Coconut aminos - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the eggplant and bitter melon to the pot, cooking for 5-7 minutes until they begin to soften.
  3. Stir in the miso paste and coconut aminos, mixing well to combine.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for an additional 10 minutes.
  5. Meanwhile, cook the udon noodles according to package instructions. Drain and set aside.
  6. Once the broth is ready, season with salt and black pepper to taste.
