Steps

  1. In a pot, bring 500 ml of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  3. Add the diced eggplant and sliced bitter melon to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
